Chewy sugar cookies are also the easiest ones to make: the drop variety that you spoon from the bowl right onto the pan. While rolled sugar cookies are stars when it comes to awesome shapes and decorations, they’re not known for chewiness.
I researched at least a dozen recipes, read the reviews on each, and chose a few to bake in my own kitchen. I bake a lot of cookies because I love to, but also as a ‘laboratory’ for testing out the oven mitts my company makes.
My criteria for ‘easy’? The recipes had to use ingredients I almost always have on hand (butter, sugar, flour, vanilla, eggs and a leavening agent like baking powder), use no more than 2 bowls, and could take no longer than an hour to prepare. Basically, they had to be the type of recipe you could make if a cookie craving grabbed you late one night; everything on hand, no big mess, and from bowl to mouth in under an hour.

These are about as classic as you can get, and produce a nice soft cookie that tastes good. My only suggestion is to double the vanilla from 1tsp. to 2 tsp. You have to be careful with sugar cookies, since they can be a little bland-tasting. I happen to love the taste of almond extract, and use that for the 2nd teaspon. Lemon also works – whatever you like best.

Another excellent basic sugar cookie recipe that has the tell-tale sign of a good, chewy cookie: the top ‘cracks’ a little. Nothing better.
- Refrigerate the dough before baking so it doesn’t spread out and flatten
- Use unsalted butter and soften to room temp before using. Don’t microwave the butter or you’ll get a flat cookie.
- Roll the cookie in granulated sugar for a nice crackly feel and a little extra sweetness

I’m a huge fan of Cooks Illustrated because they test the heck out of every recipe. These sugar cookies have one ingredient that you may have to run out to the store and get (cream cheese), but these cookies were so darn good I just had to include them on this list.
